Definitely a conversation starter! We call this the Black and Tan for obvious reasons, we float light color Fall honey or amber color Summer honey with a dark color Spring honey.... Viola!The color is related to the flora and fauna in bloom at the time bees are harvesting.... the float is due to water density so we always have to test with a refractometer to determine if the dark honey will float or sink.Each honey has a unique flavor - you choose to dip separately or stir... We keep ours separated as long as possible until osmosis eventually blends them some months later.
