Honey BBQ Chicken

Today is your day to be Commander of the Grill! Embrace foods of the season with fresh zucchini and honey barbeque chicken breast fillet's. If you are like us, we are cooking a lot more around the farm and have ventured into flavor realms like the Star Wars fleet in a new galaxy.

Our zucchini plants are more than 4 feet across and are producing 6 to 8 tender vege's each day - they are best when picked young, about the length of your hand. We are also harvesting honey from our apiary - so what a great combination to mix both the zucchini and honey with a protein such as chicken or firm tofu.

Prep takes about 10 minutes and cooking is just another 10 minutes - so in 30 minutes or less, you can have a healthy meal!

Ingredients

Step 1. Choose a protein such as 4 Chicken breast fillets or 8 ounces of firm tofu - if grilling chicken breast, they should be on indirect heat for about 10 minutes or until internal temperature reaches 185 degrees Fahrenheit

Step 2: Create sauce with 1/2 c ketchup mixed with 1 Tablespoon of apple cider vinegar, 1 Tablespoon Worcestershire sauce, 4 Tablespoons of Local Raw Honey such as Scott Family Farm honey, and 1 teaspoon of minced garlic

Step 3: While protein is cooking, baste with the sauce created in step 2... slice zucchini lengthwise and place on grill - baste with same sauce. Cook approximately 5 minutes.


Once cooked, layer the protein and zucchini on fresh brioche or whatever sandwich bun you happen to have in the pantry. This is especially good smeared with aioli, sliced red onion, or stacked high with sliced avocado!
